Side Salad with Loaded Garlic Toast

In my last post I made pasta and this time I made the side salad and another batch of garlic toast appetizers with the other half of the french bread.  I bought a salad mix this time but have gotten the items to make my own in the past and that works just as well, especially for a larger family. This grocery trip we were strained because our foodstamps just got cut in half but I really wanted salad so I splurged on a bag for $2.50. I used leftovers from the other day to dress it and also used up ingredients from the first round of bruschetta.

I ran out of mushrooms but had peppers and onions and I added some leftover homemade salsa and cheese.

I can use the leftover pizza sauce yet another time to make bacon, marinara and provolone smothered chicken breasts. I will feature that recipe with photos after we have it for dinner later this week.
