Customized Chili

I start with a large can of tomato juice, a pound or more of beef cooked with onions, garlic powder, onion powder and chili powder. Then I add  more chopped onion and green pepper. Then, two cans of chili beans and a can or two of dark or light red kidney beans.

You can really personalize your chili by adding other types of beans or experimenting with the seasonings and vegetables. Add your ingredients to a large pot and cook on low for several hours or until all ingredients are tender. I like my chili a little soupy but by the end of the day this version (seen below) thickened up quite a bit.

Serve with: crackers, bread, peanut butter sandwiches…

or simply top with cheddar cheese and sour cream…

These photos were taken shortly after I started my chili and there wasn’t enough time to snap more before it all disappeared!

You could also use a thicker version of this recipe for chili dogs/chili cheese fries or a yummy chili party dip with melted cheese to serve with tortilla chips :) I will be sure to cook a lot more soon and, most importantly, get some pictures!
