Mixed Berry Cupcakes [Instructions w/ Photos]

Remember these? They are made by boiling (frequently stirring) your favorite berries (I used raspberries, blueberries and blackberries as they are my favorites AND on sale!) with sugar. I don’t know how much, a good handful, or a couple of cups, however sweet you wish your fruit goo to be but remember it is fruit so it is already pretty sweet. You just want to get a good consistency. This will vary based on the fruit but you don’t want it too runny or too hard or it won’t work well in the cupcake. The key word as Angie would say (the lady I stole the gorgeous idea from) is GOO!

You just mix up your favorite box or homemade cupcake recipe and plop it in greased baking cups and add a spoonful of goo and bake as directed. (Usually 20-30 mins at 350 degrees) I use a toaster oven so it is 350 degrees and whenever a toothpick comes out clean!

After these amazing cakes cool on a wire rack you can frost them in cream cheese icing from the store or whip up some of your own… this is a recipe I am trying to perfect. I will post an update here when I get it just right :)

I add a ridiculous amount of berries. The ones with yellow liners and blackberries are blueberry filled and the pink lined raspberry topped treats are filled with even more delicious raspberry goo. These are always the first cupcakes to disappear!
